Hear Ye, Hear Ye!

( Insert trumpet blasts)

"Come one, come all to the castle of Lady Jessica and Lady Ruby as they honor their hard working serfs who are being promoted to knighthood! There will be feasting, dancing and a grand knighting ceremony!"

All school year we have been studying the Medieval World, and last week all of our hard work paid off in a fun afternoon of living history! The students invited the Lords and Ladies of Back2Back (a.k.a., their parents) to a feast, complete with Medieval delicacies, a jester, minstrels, a troubadour, and servers!

The servers taking out the first course of fresh fruit...

We also had scones, Wassil, Welsh Rabbit, and Yorkshire Pudding. A huge thanks to the parents for helping create these Medieval dishes!

After the feast we had a quick costume change for the knighting ceremony...

"I dub you Sir Mark..."

After the ceremony we all headed outside to learn some Medieval dances!

That was such a fun day! This week in Anatomy we are studying Health and Nutrition, so I have been doing a Fruit and Veggie Challenge with my students. If they can get the recommended serving of fruits and veggies everyday then we will have a "Nuts for Nutrition" Party, complete with healthy snacks and outdoor activities! January is shaping up to be quite a fun month in SMCA!

Vamos a Hacer Pizza!

Let's make pizza!

Last Friday Ruby, Kathy and I had some of the kiddos from Casa Hogar Douglas over to make pizzas and watch a movie. The kids loved it! (And so did I!) :) This was an easy lunch to put together and yet so much fun!
Rolling out the dough...

You're never too young to learn the art of pizza making!

Adding sauce and toppings...
Watching a movie while the pizzas bake...

Lunch time!

What a fun afternoon! A couple days later I saw the kids at church and they couldn't stop talking about their little pizzas and asking when they could come over and make them again. This is something we might have to do more often! :)

Around the World and Back Again

I by no means have traveled around the world in the last month, but Christmas break had its fair share of plane rides, so I still thought the title could work! It was so wonderful to be home and spend time with family and friends, then we jetted off to Kauai for a family vacation! What a blessing that time with my family was! Family, if you are reading this... I MISS YOU!!

Before I dive back into what's been happening in Mexico the past two weeks, I want to post a few pictures from Christmas because they are too beautiful to ignore.

This was certainly a Christmas unlike any other!
Waves on the beach...

A glorious sunset...

This has to be one of the most beautiful places in the whole world. The road to get there is treacherous, but the reward is well worth the car sickness... I feel like there has to be a spiritual analogy in there somewhere! :)

A double rainbow! Can you find the faint second arch to the right of the first one? Stunning!

I hope that 2011 is off to a great start for you! I am now back in Mexico... missing the beach but thrilled to be back with my kiddos serving in the place that God has me right now! This weekend I'm planning to do a few posts on what we have been up to in SMCA, but I wanted to begin the year by showing off God's glorious creation! He is mighty, powerful, creative and sovereign. This message is proclaimed in every wave that crashes, every rainbow that streaks across the sky, every sun that dips below the horizon... even in every snow flake that floats to the ground (friends north of the boarder, that one is for you!). I praise the Lord for his creation!
